Lovely tasty biscuits for everyone.



100g softened butter
100g of caster sugar
1 grated and juiced lemon
1 beaten egg
340g plain flour
1 teaspoon baking powder
1 tablespoon milk


Grease a couple of baking trays and preheat the oven at 170°C
Cream butter, sugar and lemon rind until light and fluffy
Add the egg and lemon juice gradually, beating well until each addition
Mix in the sieved flour and baking powder and add a little milk to form a dough
Place your biscuits or letters on lightly floured board
Bake the biscuits for 20 minutes until golden brown
Leave to cool on a rack and then enjoy
